This cake is rich, different, and not too sweet. But don't eat it before your drug test!

SOLO POPPY CAKE

1 c butter or margarine, softened
1-1/2 c sugar
1 (12 oz) can SOLO Poppy filling
4 eggs, separated
1 tsp vanilla extract
1 c dairy sour cream
2-1/2 c all-purpose flour
1 tsp salt
confectioners sugar

Preheat oven to 350 F. Grease and lightly flour a 9- or 10-inch tube pan. Cream butter or margarine and sugar together until light and fluffy. Add poppy filling. Add egg yolks, one at a time, beating well after each addition. Add vanilla and sour cream. Sift together flour, baking soda, and salt; add to mixture gradually, beating well after each addition. Beat egg whites untill stiff but not dry; fold into batter. Turn batter into prepared pan. Bake about 1 hour and 10 to 15 min, or until a cake tester inserted in center of cakes comes out clean. Allow cake to cool about 5 min. Remove from pan. To decorate, sift confectioners sugar through a paper doily or a cutout on the top of the cake.
