Matzoh

Pronunciation: MOTT-seh
Meaning: Flat unleavened bread

Matzoh is eaten especially during Passover to commemorate the Jewish exodus from Egypt. It is written that in their haste to flee, the Jews could not wait for the bread to rise. During Passover, no bread, yeast or leavening of any type may be eaten.

One of my favorite Passover specialties is matzoh brei, which is a cross between a pancake and an omelet. It is a delicious concoction made with matzoh and eggs and is often served for Brunch during Passover. Of course, matzoh may be eaten at any time of year.
