Olives and Olive Paste from BLAI PERIS

This is an authentic father & son Catalan company which does it's own arbequina and empeldre (black) olives with no preservatives and insofar as I can tell, no pasteurization. The arbequina are, of course, a famous Catalan cultivar (olive type), which is grown all over Spain now. Arbequina is the olive for the D.O. Suriana olive oil like the Antara. I enjoy their light but distinctive and almost nutty herby flavor and they really add depth to a dish like roasted chicken with olives. AND as you know, I think that they are the heart of a tapas party. The empeldre is a delicious ripe black olive from Aragón. The flavor is what kalamatas always promise and NEVER deliver: a sweet, meaty full flavor without all the violence of too-aggressive brine. And this is where I get excited about farm fresh eggs... Empeldre olive paste on an egg salad sandwich to remember or as the olive component with a salad Niçoise. Well, Empeltre is the answer!
