Flor de Sal from the Algarve

The Flor de Sal is a Portuguese Fleur de Sel like product. The product is excellent but different from the Fleur de Sel in Brittany because the taste of the minerals and the salinity are slightly different. Anyway the weather in the Algarve during most of the year is sunny so production is still back-breaking but predictable. The product itself is as we would hope: fine, even elegant crystals of salt reminiscent of tiny snowflakes with a bright white cast. The Algarve salt fields are in a nature reserve which helps mitigate industrial cross pollution. It is so natural and agrarian that when I was there last year, there were a pair of Great Blue Herons on a honeymoon! The producers live in harmony with nature and are real true believers in the Slow Foods movement and sustainable agriculture. Plus it turns out, they have quite a history with the cooperative in Guèrande!
